Exploring Nettles for Dinner

Last month I wrote about using nettles for making fabric. This month, I want to explore another use for this stinging weed that tormented my childhood, nettles as a food source.

I know! Eat a weed? But ... actually ... it's a very nutritious weed. They are rich in calcium, iron, magnesium, and full of vitamins C, A, and B complex. They also contain more protein than most green vegetables. The dried leaves are up to 25% protein!

Our Native American ancestors knew about nettles and not only ate them but used them as a medicine. Nettles are also well-known as a food source in much of Europe, even available for sale in certain types of groceries. 

But what do they taste like? I'll be honest, I haven't tried them - yet. But I read their taste described this way, "like the lovechild of spinach and an artichoke." That makes me curious!

If you 're brave enough to give this a try, it's recommended that you harvest the nettles in the early spring when they are sprouting, taking only the top three sets of leaves from each plant. (It's not recommended to harvest any after the plants have flowered.) The leaves are then used by themselves and cooked similar to spinach, or added to soups and stews. They can even be cooked and used in the making of noodles. The internet is full of recipes!

Remembering Mama


Mother's Day will be celebrated this month. 
It's a special time to show our love, remembrance, 
and respect for those women we call mothers. 
Follow me as I journey down memory lane, and hopefully you'll have fond memories too.

Things Mom Did:
* One of her greatest joys was cooking for her family! I remember Friday nights with hamburgers and the works--anything we wanted on them...and then hamburger gravy ladled on top of this creation. Lol. Don't knock it till you try it. Delicious! 

* She read to us. I'm pretty sure she got tired of reading some books over and over to us. We'd catch her occasionally trying to skip pages and make her read it correctly! But I never remember her complaining. I suppose that's why we all read today!

* She loved God. Church was her thing, and she taught us that there's where we were to be on Sundays and anytime special services happened! Many times I'd see her reading her Bible or see it opened on a chair, table or sofa. A great example she was.

Traditional New Mexican Biscochitos



The official State cookie of my home state of New Mexico is Biscochitos, a delightful cookie featuring a blend of anise, cinnamon, and sugar. Here is a recipe passed down from my mother.

Heat oven to 350 degrees.

1 1/2 cups of sugar
1 1/4 cups of shortening
4 cups of flour
1-2 eggs
2 tsp anise seeds
1 tsp anise extract
2 tsps baking powder
Up to 1/4 cup of brandy or sweet wine - enough to mix to proper consistency for rolling and cutting

Blend shortening and sugar. Add in egg and mix for about 10 minutes. Add flour and baking powder and spices, mixing until you have a stiff dough.

Roll to desired thickness and cut in shapes. A fleur-de-lis is traditional. Sprinkle with cinnamon and sugar and bake 15-20 minutes, depending on how thick you roll the cookies, until just browning on the edges.

Cooking It Up with Teresa Lilly

Cooking Up Christmas

With Special Guest Teresa Lilly


When I was asked to join the group of writers for the Mail Order Angel Bride series I was ecstatic.  Darlene Franklin wrote the first book in the series “Jacob's Christmas Dream,” and gave the writers an outline and character names to build their stories from.

I wrote about Henrietta and Benjamin.  What came to mind was the thought that a mining town, which had very few women in it, would be in need of a place to eat.  So, I developed a theme around that.  Thus, Henrietta comes to town to work at the new Angel Vale Eatery.   

What she does not know is, Benjamin is the owner of the eatery.  He bought it for her as a wedding present.  Since they do not wed immediately, Henrietta is frustrated to not be able to speak to the owner of the restaurant.  Instead she is given full charge.   


Along with several other concerns she has such as, what does Benjamin do for a living?  Where does Benjamin live?  Where will she live once she marries him?   These questions continue to plague their budding relationship.  

Don't worry....this is a happily ever after.....

Created Creative and Lovin' It!


Happy, Blessed, Favor-filled Wednesday, y'all! Caryl McAdoo here, and I'm so glad to be with you today on Stitches Thru Time! "Woven Wednesdays" are to share crafts (or recipes). And I do love trying new recipes. I saw one that looked so good and easy the other day on Facebook, that I went and got ingredients for it today, so I'll have to let you know how it goes! 


1-2 tsp melted butter in each cup of a cupcake pan, then a Tbsp brown sugar, then place a maraschino cherry in the center. Drain a can of crushed pineapple (retain juice) then put a heaping Tbsp crushed pineapple into each cup on top the butter/brown sugar/cherry :) 

Make a yellow (or pineapple cake) batter up  according to box instructions except replace water with the drained pineapple juice - adding a little water if needed to get to required amount of liquid for the cake. Then pour batter over the rest to fill each cup. Bake in pre-heated 350 degree oven 30-35 minutes until golden brown and toothpick comes out clean. Cool 5-10 minutes. Place cookie sheet on top the muffin pan and invert! Serve warm...

Doesn't that sound SO EASY? 


One lady said some people like to use pineapple tidbits because they look like a flower, but her family preferred the crushed by far. Another lady said spray every cup first, too. But that isn't what I'm writing about :) Don't you just love it that every single person has a desire to create inside them? It's because we're made in His image, and He is a Creator! The Master Creator!

One creative outlet He's given me is singing new songs. He gives them to me, and I love to sing them. I'm reminded of a part in one called "Angels Unaware", a part of the chorus goes:  "He can count the stars! He hung Jupiter and Mars! He made every bird and butterfly as different as you and I." I'd love to sing it to you if only I knew how to attach a song URL!

But we all love to create, make things, from scrapbookers to painters and recipes to quilts! My husband likes to build barns. He's on his fifth now! Here's one of his firsts built when we inherited TWELVE quarter horses from his dad. PawPaw bought on Mare, Lady Bingo, then "created a herd".

And here's something I did with some of Ron's old junk to decorate one of the outside walls of barn two :) That's my shadow :) And my son takes all sorts of old furniture and stuff--a lot he picks up free on people's curbs. He saws, sands, paints, hammers and repurposes it into something brand new he sells for buckage! There's TV shows of men who do this for a living! And I love watching them.


And guess what else I like to create! Stories! I've always loved the written word and God led me to an awesome writers' workshop where I was mentored and learned the craft of creative writing. I just released my 19th title this month! Story & Style, The Craft of Writing Creative Fiction. I pray it will help many many aspiring authors and also, multi-published authors!

What qualifies me to write a teaching book? Thirty years writing for publication and fifteen years editing manuscripts professionally...and I did mention nineteen titles. I'm currently writing three series: two romance - historical and contemporary and a Biblical fiction. So this is another way I enjoy creating.


We ALL do! Even people who say they don't have a creative bone in their body. They excel at wrapping the most beautiful gift packages you ever saw, or maybe their garden is their outlet. The expressions of creativity are as numerous as the stars in the sky! BTW, if you're a city dweller, you owe it to yourself to drive to the country and check out the night sky!
